Arseniko is the renowned ‘black’ cheese produced in Naxos Island. It is black outside as it is matured within extra virgin olive oil and hard yellow inside, with gruyere type of taste. The arseniko is produced from the mix of pasteurised cow, sheet, goat milk and it has an intense salty, and slightly spicy taste. It is ideal for grating to pasta dishes or to make grilled saganaki.
